What is phở?
Phở is a Vietnamese soup consisting of broth, rice noodles, herbs, and usually beef, although chicken and vegetarian variants are widely available. It is one of the most beloved dishes in Vietnam, served in households, street stalls, and restaurants across the country. Nam Định holds the honour of being the birthplace of phở - the dish is believed to have first been served there in the early 20th century, around 1910, before spreading to Hanoi and eventually the world.
Full history →The three pillars
Every bowl of phở rests on three foundations. Understand these and you understand the dish.
The Broth
Bones. Charred onion and ginger. Star anise, cinnamon, cloves. Twelve hours minimum. This is where phở lives or dies -- everything else is secondary to what is in the pot.
Read about the broth →The Cuts
Rare beef that cooks in the bowl. Brisket simmered for hours. Tendon that dissolves. Six cuts, each with a distinct character -- and a combination for every appetite.
Read about the cuts →The Noods
Bánh phở -- flat rice noodles made from nothing but rice flour and water. Width matters. Fresh vs dried matters. They are not a backdrop. They are half the dish.
